When you have bananas that are overripe and going bad, this is a great way to not waste them.

Balls of Energy

energy ball 278x300 Balls of Energy

Ingredients
28 (2 ½ cups or 498 g) dates, seeds removed
½ cup water
1/3 cup natural peanut butter
1 cup Whey Crisps, crushed.
¼ cup unsweetened, non-dutched (unprocessed) cocoa
¼ cup ground flaxseeds
1 tsp ground cinnamon
½ cup ground walnuts or almonds

Directions:
In a food processor, blend dates and water. Add nut butter and blend until smooth. Add whey crisps in ½ cup increments and process. Add cocoa, flaxseeds and cinnamon and process until well blended.
With clean hands, gather some dough (about the size of a golf ball) and roll it between the palms of your hands.

Keep a bowl of crushed whey crisps nearby. If dough becomes sticky, roll it in the protein powder to keep it from sticking to your hands. (Note: Refrigerating the dough overnight makes it easier to work with the next day.)

Roll each ball in the ground walnuts or more whey crisps! Set each ball on a baking sheet. Place in the freezer for 2 to 4 hours. Serve or freeze for later.

Apple-Pie Whey Crisp Muffins

Ingredients
Dry Ingredients:
1 cup spelt flour
1/4 cup wheat flour
1/3 cup brown sugar
1 teaspoon cinnamon
1 tablespoon barley
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon sea salt
3 scoops natural flavor whey crisps
[Extra] 2 scoops of (natural flavour) Protein Isolate

Hint:
If you’re running low on Whey Crisps limit it to 2 scoops of whey crisps and replace with 2 scoops of your protein powder.

Wet Ingredients:
100 ml plain, unsweetened yogurt
2 whole eggs
50 ml olive oil
50 ml fat free milk
100 ml ginger tea
1 teaspoon fresh lemon juice
2 tablespoons cottage cheese

Apples:
2 Granny Smith apples, peeled and diced

Topping:
1 Granny Smith apple, peeled and finely diced
1/4 cup raw cane sugar
2 tablespoons spelt flour
1 teaspoon cinnamon
1/3 cup walnut, finely chopped

Directions:
First, I peeled and diced my three apples. I diced the apple that went in the topping pretty finely, and left the ones that went to the batter in bigger cubes. I greased my muffin tin with a little bit of butter, and preheated the oven to 200 degrees Celsius.

Now, I mixed the dry ingredients, then mixed the wet ingredients in a separate bowl, and combined the two, being careful not to over-mix the batter. I folded in the apple cubes, and then mixed the topping ingredients in a small bowl. Now, I poured the batter in the muffin tins, filling them about 3/4 full, and then spooned about 1 and 1/2 teaspoons of the topping over each muffin. I pressed the topping gently in the muffins with the back of my teaspoon.

Now, I baked the muffins in 200 degrees for about 22 minutes, until the tops had browned somewhat. These muffins are delicious right out of the oven, when still warm, but they’re pretty great on the next day as well. Best option is to bake during the evening let it cool overnight and serve for breakfast. I have the muffins with a fresh piece of fruit and a cup of fat free milk for a complete breakfast meal containing both protein and fast/slow carbohydrates to fuel your day. I would say this really isn’t something you can have regularly if you’re trying to maintain a strict diet, but it does make a healthy cheat meal.
